Bacon Cheddar Egg Bites

Bacon cheddar egg bites in a muffin tin

Egg bites made in a muffin tin are one of my favorite meal prep breakfasts. So easy to throw together, and they do great in the fridge or freezer. Simply pop them in the microwave or in the oven for a few minutes, and you’re good to go!

INGREDIENTS

  • 6 slices of cooked bacon, chopped
  • 1/4 c Heavy Cream
  • 3/4 C Cottage Cheese
  • 8 Eggs
  • 2/3 c shredded cheddar cheese
  • 1 c roughly chopped spinach
  • Salt
  • Pepper
  • Handful of chopped fresh herbs, thyme, oregano, basil, or chives, etc.

Set oven to 375º. Grease a muffin tin and set aside. In a large bowl, whisk eggs, and heavy cream. Add the rest of the ingredients, and mix thoroughly. Put 1/3c of the mixture in each cup of a muffin tin. Put a pan of water on the bottom rack just before you put the muffin tin in the oven, this will help the egg bites puff. Bake for 30 minutes or until set and slightly golden. Try not to open the oven before they are finish baking, this will help them puff and not fall prematurely. Enjoy!
